More curator than publican, Sydney entrepreneur Luigi “Gigi” Galuppo plans to showcase every distillery in Australia alongside the world’s best at Kingston Public Bar & Kitchen in Newtown.
He's got 25 years of contacts in hospitality, including stints at the sadly-missed Elizabeth Bay Sebel and Double Bay's Ritz Carlton. He also makes regular trips to Tasmania where he used to work for Mona's David Walsh, who has visited the bar to check out the formidable collection.
The same passion and curiosity has been applied to the dining experience. International Chef Matteo has put together an extraordinary menu, focussed around great quality produce.
